feat: update some demo app copy and UI for alpha testing

Small changes:

• Disable the EOA option for now since it's not yet launched
• Add a tooltip explaining the purpose of the light mode/dark mode toggle
• Fix import statements in the demo app code preview
• Make some config instructions and settings more clear in the demo app
