Adding pandas as an optional extra to the Amazon Provider Package. I followed the same version restrictions that all our other providers seem to use. Thought I'm not sure the origin or reason for that.

Perhaps you can double check my work @potiuk?

You need to rebase though - we had some fastapi issue in main and we had to exclude latest version
