[R] Update R package to use R 4.1+ native forward pipe syntax

Describe the enhancement requested

In #47096 we noted we can drop support for R 4.1 after the 21.0.0 release which means we can also modernize some of the example/vignette/test code to use the native forward pipe syntax (|>). See tidyverse/purrr#1177 for an example.
