Describe the issue this Pull Request addresses

Addresses #17631

Summary and Changelog

  • Removes HoodieSparkAvroSchemaConverters and updates usages to use HoodieSchemaConverionUtils
  • Removes unused methods from AvroConversionUtils
  • Adds schema cache to match functionality of AvroConversionUtils

Impact

Pushes more code to use HoodieSchema directly
