Maintenance: fix AppSyncEventResolver docs and layer arn

Summary

We should fix a couple of code snippets in the new page of the docs now that we the CloudFormation resources for AppSync Events integration are available.

Why is this needed?

To correct a few items in the docs that were left out during the release.
