With the rebranding of Elasticsearch as OpenSearch, the AppSync module should support OpenSearch domains as a data source. This will probably rely on the AppSync service making changes to their internal data source code, as well as CloudFormation changes. This ticket is simply anticipatory and to ensure that we do pick up the work once it is possible to be completed.
Once the OpenSearch data source is released, the Elasticsearch data source should be deprecated.
