Allow switching between versions of arizona-bootstrap version 2.x now that we are changing the path for those assets.

Since the Arizona Bootstrap project suggested that they will be retiring the use of the main and latest CDN buckets in favor of 2.x and latest-2x respectively.

Quickstart is written using Arizona Bootstrap version 2, and in order to update the two projects separately, we are splitting Quickstart onto the 2.x branch until a Quickstart PR can be made upgrading to 5.x.

This was done on that project so that development can begin on Arizona Boostrap version 5 (named as the successor to Arizona Bootstrap version 2 and tied to Twitter Bootstrap version 5).

Conditions of satisfaction

• Can switch to 2.x version (formally main)
• Can switch to latest-2x (formally latest)
• Database/Config update for existing sites.
• Update which branch can trigger our release workflow.
