This is a rather savage update for something which is meant to only bump a dependency by one minor version.

It updates all active* dependencies by major version.

- activemodel (6.1.4.1)
- activesupport (= 6.1.4.1)
- activerecord (6.1.4.1)
- activemodel (= 6.1.4.1)
- activesupport (= 6.1.4.1)
- activesupport (6.1.4.1)
+ activemodel (7.0.1)
+ activesupport (= 7.0.1)
+ activerecord (7.0.1)
+ activemodel (= 7.0.1)
+ activesupport (= 7.0.1)
+ activesupport (7.0.1)

It also removes zeitwerk.

On the other hand, tests pass locally and CI tests pass and some quick manual testing showed no obvious issues and we're going to have to update these dependencies eventually...
