Prepare language bindings libraries for 1.0.0 alpha2 rc1 release

Description

This PR updates documentation and tests (if required) to all 4 language bindings libraries in preparation for the 1.0.0-alpha.2-rc1 releases. It also removes the api-docs directory, the unecessary tox config file, and the authors from all libraries.

Notes to the reviewers

• Local builds of bdk-android, bdk-jvm, bdk-python, and bdk-swift have all build correctly.
• Local tests of bdk-android, bdk-jvm, bdk-python and bdk-swift have all passed and did require very small changes.
