Sanitize strings in charon file creation

Sometimes making OTUvsTubes fails because of bad characters in the charon file.
These appear because of unusual scientific names. Specifically, where they add author and date info inside the name field. So you get stuff like Melanotus_communis_(Gyllenhal,_1817) which kills the CSV formatting with that bad comma.

The Charon creation script could sanitize while adding these names. We probably do not want anything in parenthesis. But at the least remove/replace all bad special chars.
