What this PR does / why we need it:
We've been using k3s-io/kubernetes as a dependency for kubernetes, mainly because it helps us set the dependency version information, but to make it easier and more timely to upgrade kube, we've changed it to use kubernetes/kubernetes.
We need to set the version variables within the dependency at compile time
