Fix/grpc heisenbug

• Fixes Deadlock when using GoogleAzureOCR with parallel threads #17, the "gRPC heisenbug" by excluding the affected grpcio versions
• Introduces dependency groups for better control over the optional dependencies
• Moves setup to pyproject.toml
