README: remove deprecated plugins, add craco-esbuild #434

Thanks for the PR @leothorp. I plan on moving most of that info to a new documentation system but it'll definitely be good to have it here for now and to have those same plugins in the new docs. If you could keep the old ones but mark them as deprecated, that would be great! |

Actually, never mind. I just looked at the deprecated plugins and it looks like the alternatives are either officially supported or already on the list. What you have is good. |

I've been finding the craco-esbuild plugin useful, figured it would be good to have in the README.
I also removed a couple whose READMEs indicate they are deprecated. if you think it's better to keep them there and just mark
[deprecated], I could change it to that as well. Thanks!
