Update RTFD for 1.6.1

Describe the bug

RTFD.io needs to be updated when 1.6.1 ships. 1.6.0 RTFD remains broken and 1.5.0 is the "latest".

• I have tested with the latest published release and it's still a problem.
• I have tested with the master branch and it's still a problem.

Fixed configuration for v.latest so the default view is now up to date with the default branch.
