test tracing event changes for Pinned Object Heap

Pinned Object Heap requires diagnostic changes, see here for the overview.

For tracing (ETW/EventPipe/Lttng/EventListener) this PR and this one made the event changes and mentioned testing in PerfView, but I suspect there is still more to do:

• Update the docs for our events
  Issue - Document GCHeapStats_V2 Runtime Event docs#17995
• Do at least manual testing of EventPipe (dotnet-trace), lttng (perfcollect script), EventListener
• If the GC team wishes to prioritize it, add an automated test that will validate the data in these events
