Support for persistent IdentityHubStore

Which Areas Would Be Affected?

Identity Hub

Why Is the Feature Desired?

Currently the IdentityHub only supports an in memory version of IdentityHubStore. As a consequence, whenever a connector is restarted, all stored Verifiable Credentials are lost.

Solution Proposal

As done for most stores in https://github.com/eclipse-dataspaceconnector/DataSpaceConnector, two extensions will be provided:
