Obsolete old Metrics collection and /metrics endpoints

Obsolete old Metrics collect and /metrics endpoints are no longer needed and should be removed.

Describe the solution you'd like

Remove the code for collecting the old metrics, the endpoints to get the metrics and remove /metrics the swagger files.

• For Swagger files, each service swagger file must be update to remove the /metrics endpoint and DTO information
