Adds an "Upgrading" topic with links that point to the breaking changes and the release notes.
Also removed the 6.2 auditbeat BCs from the 7.0 docs. Note that I have #11674 open to remove the other 6.x BCs from the platform ref. If users want to see BCs for the 6.x series, they should look at those docs, not 7.0 (that's how we handle BCs for all other stack products).
