What does this PR do?

Run on a daily basis the MacOS job
Support for minor alias that points to the latest release branch, for instance 7.15. This is gathered from https://github.com/elastic/apm-pipeline-library/blob/42b63838d1b82f6af75427ed078ad3a16226aaca/vars/stackVersions.groovy#L56-L60

Why is it important?

Add more coverage for the Cloud/AWS tests and the MacOS

Test

I validated the minor calculation in groovy with something like the below snippet:
