Customizable data table headers

This has been brought up to some degree before (#1543) but considering one of the main areas of Kibana is a Dashboard that non- or not-so technical folks may want to digest it is an issue for me.

If I want to display a Data Table, I don't have a way format the headers to be meaningful

So for me it looks something like:

filters              Unique count of clientip.raw
tags:XYZ        12345
tags:ABC        567

I would love to be able to do some basic formatting i.e. format the filters to be transposed to something more meaningful.

The filter aliasing part of this request is a duplicate of #2245 so I've removed it from your original ticket and updated the ticket to only have the scope of editable data table headers
