* Allow config prefix override

This change will allow to override the default configuration prefix 'KAFKA_MONGO_WATCHER'
with a environment variable called : 'KAFKA_MONGO_WATCHER_PREFIX'

* explain KAFKA_MONGO_WATCHER_PREFIX

* update opentelemetry config name
