doc updates for saas request overrides

Purpose

#815 allows developers to extend their saas configs with custom python functions. These updated docs explain how to do this in full.

Changes

• update the saas config docs to be more user-friendly
• add saas config function override docs based on notes in Python overrides for SaaS config endpoints #815
