📚 DOCS: Fix a few old URLs

Add required configuration to .readthedocs.yaml. See https://about.readthedocs.com/blog/2024/12/deprecate-config-files-without-sphinx-or-mkdocs-config/.

Correct a few links in the documentation:

1. Correct the EBP Contributing Guide link
2. Correct links to markdown-it source code (extensions changed from .js to .mjs; this relates to docs: replace .js with .mjs in links to files markdown-it/markdown-it#981)
