Bump version to 1.12.0 & prepare for release

This release only includes documentation changes, refactorings and a bug
fix for a regression introduced in v1.10.0. I'm not entirely sure what
the semantic versioning version bump should be, but I'm erring on the
side of caution by making it a minor version bump.
