Version 2.1 of the Contributors Covenant was released already almost 3 years ago. Better integrate it late than never.

Having an enforced Code of Conduct is more important than ever.

While at it, adapt it more to the needs of Git for Windows.

Modify the Code of Conduct for Git for Windows

The Git project followed Git for Windows' lead and added their Code of
Conduct, based on the Contributor Covenant v1.4, later updated to v2.0.

We adapt it slightly to Git for Windows.
