jinja2 released a new version on April 28, could be it?

Check out sphinx-doc/sphinx#10291. Pinning Jinja2<3.1 works locally for me.

Thanks for taking a look! I'll probably opt for bumping Sphinx instead, since that looks like it might resolve it too.

Previously, we were just pip-installing the requirements and getting whatever transitive dependencies. This allowed #151 to happen.
