Set dimensionality of output vector in the EmbeddingModel method in Client

Description of the feature request:

Add a method to allow setting the dimension of the output vector, which allows for the elasticity of the new embedder gemini-embedding-exp-03-07

What problem are you trying to solve with this feature?

The new embedder only allows for 3072 dimension, which is hard to find in most cloud vector stores.
