Docs: Revise/update the overview section. #3980

This is a proposed complete rewrite of the docs Overview section. The goal of the overview is to give the reader an understanding of what Loki is, and what Loki is good at, leaving out all implementation details.

Please suggest additions and alterations (maybe even other diagrams?) that can improve this first draft.

Once this PR gets merged in, I hope that future PRs will improve the overview's content. What's proposed is way better than what currently exists, but Loki is a moving target, and the overview should move with that target.
