Did we also run 1.11.x tests on Envoy 1.20.4 and 1.19.5 as well?

Oh, good call. I usually only consider these upgrade PRs for the latest release series, but this is different since it's patches. I will create a separate PR for 1.11.x.

Description
Envoy released some security-oriented patches recently for 1.22.1, 1.21.3, 1.20.4 and 1.19.5. This upgrades our integration tests to run against these latest version and adds them to the support matrix in our docs.
