4.x: FIx LRA Coordinator config reference documentation

The file docs/src/main/asciidoc/config/io_helidon_microprofile_lra_Coordinator.adoc is not backed by config-metadata.json of any module, and as such would be lost if we use code generation only.
Either correctly annotate configured types, and add appropriate annotation processor path and dependencies, or move the documentation somewhere else (either inlined in the document that uses it, or as a shared file).

docs/src/main/asciidoc/config/ should only contain fully generated files, and files in this location will be removed in the future (and will be code generated when building docs only).
