Configure Analytics Dashboard

We should setup an analytics dashboard so we can have an idea for metrics like DAU, which things are accessed, how users interact with the website, etc.

There are a few open-source solutions for this which are entirely self-hostable:

• Posthog - Open-source and self-hostable analytics platform. GitHub
• Plausible - which has a plugin for Next.js
• Umami which is open-source and self-hostable. GitHub

This will be really helpful to identify bottlenecks, and allow us to improve the website to become more streamlined.

Update - Posthog has been chosen platform to be used. It just needs to be setup now.
