Value not updating correctly after successful round of digitization

I just set this up yesterday and thought it was working great, but for some reason the value isn't being properly updated. In the log below you can see every 2 minutes a new raw value is correctly read, but the previous value only increments by some (seemingly random) small amount. And then in the last line of this log the value finally gets fully updated to the proper amount.

In my config my MaxRateValue is set at 1000 and MaxRateType is RateChange. Occasionally a number is wrong so I like to have some "protection" against a faulty read. But the numbers below are on the order of a few gallons per minute, nowhere close to 1000. And the log shows no error, so I don't think this is affecting it.

Any other settings I should be investigating?

Edit: here's an image of the main page after a successful run, showing that the raw value is correct but doesn't get pushed to the current value:

I haven't figured out what causes the value to finally get "unstuck" but it always does, eventually. It's like it needs a big enough change, or a long enough duration to finally update.

Edit2: Just now it updated the value to a number that is slightly larger than the current reading. I have no idea where these numbers are coming from? The raw reading changed to 15041.97, and for some reason it updated the current value to 15042.07. It's like it's just gone rogue. I also just noticed the timestamps went backwards 5 minutes. I did reboot the device several times during this period, and also changed the interval from 2 to 3 minutes (I noticed that it said 3 was minimum so I changed it, hoping it would resolve this issue. But it didn't).

I think I just identified the issue, looks like an RTFM problem. I had this setting enabled, and I just disabled it:
