docs: remove goerli and add holesky addresses to README

Motivation:

Updating the README.md to add our holesky contract addresses and removing goerli addresses to prepare for network deprecation.

Modifications:

Added the holesky contract addresses to the deployment section and removing the goerli addresses.

Result:

Users will be able to find our Holesky contract addresses.
