Proposed changes

Updated the docker-compose files with new and missing environment variables.
Changed the base image of all-in-one image to ubuntu, to allow arm64 builds (mongodb stopped publishing official images for debian).
Added volume mounts in default multi-image compose file.
Fixed redis setup in multi-image to restart unless-stopped.
