docs: token and keypair usage revamp

Create a doc in Notion (internal knowledge) to track the usage of tokens and key pairs across external services like influx, grafana, slack, clickhouse, etc.  Link out to the token details in 1password.

Make new keypairs as needed to ensure all major components have their own.

Audit the existing tokens that have been created.
