Update release name to contain platform identifier

This small change updates the release pipeline to use the platform identifier instead of the Github Matrix OS

For example: darwin instead of macos-latest

[v0.0.1] Initial release

This release contains a messy, but otherwise working version of lugh that is enough for me to start using.

It also contains a working release pipeline although there are no tests yet.

That'll be for the second version once I figure out what would be nice to add.
