docs: change workflow diagram to list

Change the diagram view in workflows reference to list

• Refactor the WorkflowDiagram component to accept a type that can either be list or canvas, making the list the default.
• Make the original workflow diagram component a WorkflowDiagramCanvas component rendered only if type is canvas, and add a new WorkflowDiagramList component.

Note: the"Diagram" title will change to "Steps" next time the references are generated
