The legacy Xbox One XDK was last shipped on July 2018, and has been replaced by the Microsoft GDK with Xbox Extensions. This was the only scenario where VS 2017 support was still being kept.
This PR removes the project files for legacy Xbox One XDK. It also includes some minor CMake updates.
