[receiver/redisreceiver] update scope name for consistency (#34470)

Update the scope name for telemetry produced by the
redisreceiverreceiver from otelcol/redisreceiver to
github.com/open-telemetry/opentelemetry-collector-contrib/receiver/redisreceiverreceiver
