Update Imagestream objects with the N version and drop the old n-2 (n-3) version

Description

This PR updates the ImageStreams with the new N version 2024.1 and drops the old N-2 (n-3) version and all its references.

Updated imageStreams:

• Minimal
• GPU Minimal
• DataScience
• Tensoflow
• PyTorch
• TrustyAI

In regards the code-server and R Studio will be incorporated on their PR #452 and #453 accordingly

Merge criteria:

• The commits are squashed in a cohesive manner and have meaningful messages.
• Testing instructions have been added in the PR body (for PRs involving changes that are not immediately obvious).
• The developer has manually tested the changes and verified that the changes work
