Hi @Moosems, I'm happy to report that this feature is already part of GitHub Mobile, but perhaps not where you expected it to be. Step One: Accessing the Info Menu
In order to edit information of a pull request or issue, you have to tap the floating "info" button in the bottom right corner:
Step Two: Selecting an Edit Field
From there, you'll be greeted by a screen which allows you to edit the fields of the issue or pull request, if you have edit permission over the issue or pull. 
Step Three: Modifying the field
Select the field you're looking to change -- in this case, labels -- and edit the labels as you see fit.
