My question is: I want to switch from Auth0 to Ory because it is open-source and way cheaper then Auth0. But how exactly does this work, Do I only need Kratos, or do I need Hydra or is it possible to combine these two? Is there anyone who has experience with a setup like this? *Added: |

Ory uses a different security model than Auth0.
I think in your case (since you also use OAuth to authorize your API) Ory Kratos & Ory Hydra would be the services you need to replicate that setup.
Have a look at the setup from Pixie Labs, that is probably the closest example for your use case I have at hand.
Ory Hydra is currently being implemented in Ory Cloud and will be available soon. I would recommend to do some testing with a local PoC and then migrate to Ory Cloud once Hydra is available there.
