Upgrades Node.js to version 20, which is the latest LTS release. This PR also updates the contribution guidelines to reflect this, as well as some minor formatting and consistency changes.
The individual packages now no longer have instructions on how to set up Node.js for development, as this was done inconsistently and such documentation is already present in the contribution guidelines. As well as this information not being incredibly relevant for users that just want to install the package.
