This adds some mocking using https://github.com/wheresrhys/fetch-mock-jest. My plan is to build a library of test site data to cover a bigger range of the extraction process, so that the development can be partially decoupled from having to be logged in.
Ideally, the extension could be use to create the test data itself, logging the fetch requests it runs and generating a file that can be used for more test data.
