Document assessment process in more detail

On The auditing process we have a high overview of the process documented. But after the ten or so assessments we have done now, we have established a fairly detailed and repeatable process.

We should document this more so that the knowledge is shared across teams, and it would be easier for newly employed stewards in the future.

By visualizing the process, perhaps also insights to optimizing it might occur.
