Our current build has versions hardcoded in buildSrc. If we move them to a package.json file we can probably use dependabot on them and get the docs-build branch to also use them.

This would also give us a natural place to put the UI bundle URL which is also versioned.

Build the nox args directly to ensure the correct `--package` is
used.
