Adapt tests to `MappingException` cause when entity creation fails

With https://github.com/spring-projects/spring-data-commons/issues/2595 and the resulting AOT Mapping Context we've introduced better exceptions that catch all nested exceptions during PersistentEntity creation and now our tests need to be retrofitted.
