REST Docs experienced both binary and source compatibility around the work we've done to make MockHttpServletRequestBuilder and friends AssertJ compatible.

We'd like to restore that as we expect more users to be affected.

This commit reverts most of cf451c9 as the underlying problem that it
fixed is no longer applicable.
