[Java][Spring] Add enum test cases and fix formParam's enum value

• add enum test cases to petstore-with-fake-endpoints-models-for-testing.yaml
• fix formParams and queryParams enum values using the fix in [JAVA][SPRING-MVC]Top enum and securityscope newline cause invalid auto-generated java code during springmvc code generation #3491
