Update OpenAI tutorial to add a bot typing indicator, plus some smaller tweaks like updating the language model to a more recent one. Corresponding code PR is here: talkjs/talkjs-examples#573
@csmeyns a quick check that the text makes sense would be great. All the updates are in the second commit so prob best to just review that. I've still got to update the typing indicator tutorial to match this, will do that in a separate PR
